Labelling allergens automatically – reviewing and releasing the proposals
When you save a dish with its name, category and ingredients, GastroZukunft enters a proposal for the 14 allergens under LMIV and for the additives (E numbers) a few seconds later. This proposal is a draft, not a checked declaration: as long as no human has confirmed it, your guests see the sentence „Allergene und Zusatzstoffe wurden automatisch eingetragen und können ungenau sein. Bitte fragen Sie im Zweifel beim Personal nach." on the dish. You review the proposals in the overview Allergene & Zusatzstoffe prüfen and release them – only then does the notice disappear. Responsibility for the accuracy of the labelling remains with you.
What is entered – and what never is
What gets proposed are the 14 allergens under LMIV and the additives (the E number categories subject to labelling). Every dish receives a visible status: entered automatically – or Prüfung nicht möglich – bitte manuell, when nothing could be derived from name, category and ingredients. The system never writes „contains none"; only a human makes that statement. You set the details by hand in Allergens, Additives & Labelling.
When the proposal is created
The proposal is created without a click: a few seconds after you save a dish in Gerichte verwalten, when creating dishes through Menüstrukturierung, and after every import of your menu. Only the dish name, category and ingredients are transmitted for this – no images, not the name of your restaurant and no data belonging to your guests. What is processed when is set out in the privacy policy.
The overview „Allergene & Zusatzstoffe prüfen"
In the panel you open Speisekarte verwalten → Allergene prüfen; the page itself is headed Allergene & Zusatzstoffe prüfen. It states in figures how many dishes need your attention, for how many the check was not possible, how many have not been reviewed yet, how many the system entered and how many you decided yourself.

The overview displays and corrects – it does not block the publication of your menu.
Releasing: „Geprüft – Hinweis für Gäste ausblenden"
Once you have checked the details, you click Geprüft – Hinweis für Gäste ausblenden – for the whole menu from the overview or for a single dish in Gerichte verwalten. The notice disappears, the entries remain unchanged; the button is available to owner and manager accounts. If you change the ingredients of a released dish, or new automatic entries are added, the notice reappears: it is tied to the content of the dish, not to the date it was saved.
Your decision is not overwritten
As soon as a human has answered the allergens of a dish – selected, confirmed or deleted them – that dish is not analysed automatically again; a later import or a new save does not reset your correction. The rule applies in the import assistant and in Gerichte verwalten alike.
What your guests see
Stored details appear as a short line on the dish, in the cart and in the order history, in the language of the guest; if nothing is stored, the line stays hidden. If a guest deselects an ingredient via „Bitte ohne …", the allergen information is recalculated so that it matches the actual composition. When you upload your printed menu
During the import, allergens and additives are proposed along with everything else. The codes of your printed legend – digits or letters next to a dish – are deliberately not copied over: the same character means something else in another house. The details are derived from the official catalogue instead. The result stays a draft: nothing reaches your guests before you have agreed in the Bestätigung step. Who is this worth it for?
For every menu with more than a handful of dishes. Taking a whole menu through 14 allergen fields by hand is a lot of work; the proposal gives you a starting point per dish instead of an empty form, and the overview names the dishes that still need your attention. This helps in particular when rebuilding a menu and with multilingual menus: the details appear in the language of the guest, with no upkeep per language – see Multilingual Menu.
Limits of this function
The proposal does not replace your review. It knows your recipe only as far as name, category and ingredients describe it – changed suppliers, home-made sauces or traces from a shared fryer are invisible to it. Legal responsibility for allergen labelling remains with the restaurant. An overview of all mandatory details is given by Legally Compliant Menu.
Not to be confused: the „KI" badge on images
The notice about automatically entered allergens is something different from the „KI" badge: under the EU AI Act (Art. 50) that badge marks only images created with artificial intelligence – not texts and not prices.

Does GastroZukunft enter allergens automatically?
Yes. A few seconds after a dish is saved, the system enters the allergens (14 under LMIV) and the additives as a proposal. If nothing can be derived from name, category and ingredients, the dish shows Prüfung nicht möglich – bitte manuell.
Do I have to review automatically entered allergens myself?
Automatically entered allergens are a starting point, not the finished labelling; responsibility remains with the restaurant. The overview Allergene & Zusatzstoffe prüfen shows you which dishes still need your attention.
What do guests see while the allergens have not been released?
The dish carries the sentence „Allergene und Zusatzstoffe wurden automatisch eingetragen und können ungenau sein. Bitte fragen Sie im Zweifel beim Personal nach." – in the language of the guest. For a dish it disappears as soon as you release that dish.
How do I hide the notice about automatically entered allergens?
With the button Geprüft – Hinweis für Gäste ausblenden: for the whole menu in the overview, or for a single dish in Gerichte verwalten. The allergens and additives that were entered remain unchanged.
Which data is transmitted for the allergen proposal?
For the allergen proposal, only the dish name, the category and the ingredients of the dish are transmitted. Images, the name of the restaurant and data belonging to your guests are not transmitted for it.
Does the system overwrite my own allergen entries?
No. As soon as a human has selected, confirmed or deleted the allergens of a dish, that dish is not analysed automatically again – not even during a later import.
What happens to the allergens when a guest chooses „Bitte ohne …"?
The allergen information is recalculated so that it matches the composition actually ordered. The guest therefore sees the allergens of their own dish and not those of the standard dish.
